Обезвреживание тяжёлых металлов. В связывании и обезвреживании металлов (см. Минеральные вещества и микроэлементы) принимает участие белок печени металлотионеин. Этот белок с высоким содержанием остатков цистеина обладает высоким сродством к ионам двухвалентных металлов, таким, как Cd2+, Cu2+, Hg2+ и Zn2+. Ионы таких металлов являются индукторами биосинтеза металлотионеина.
