До настоящего времени остаётся неясным, почему организм человека и многих животных испытывает потребность в витаминах. Предполагают, что у животных это связано с утратой вследствие мутаций некоторых стадий синтеза коферментов, в то время как такие стадии сохранились без изменений у микроорганизмов и растений. Во всяком случае наличие в пищевом рационе предшественников, необходимых для биосинтеза коферментов, а также готовых витаминов, позволяет компенсировать дефекты эндогенного синтеза, вызванные такими мутациями.
