А. Молочнокислое и пропионовокислое брожение

Многие молочные продукты, такие, как простокваша, йогурт или сыр, образуются путём брожения с участием молочнокислых бактерий (1). Последовательность реакций такая же, как и в организмах высших животных: пируват, образующийся главным образом в результате деградации дисахарида лактозы (см. Моно- и дисахариды), восстанавливается лактатдегидрогеназой [1] в лактат. Молочнокислое брожение также играет существенную роль при квашении капусты и силосовании кормов. Получаемые продукты хорошо хранятся, так как происходящее при брожении уменьшение величины pH тормозит рост гнилостных бактерий.

При изготовлении молочных продуктов прежде всего используются бактерии родов Lactobacillus и Streptococcus (3). Образующиеся на первом этапе полупродукты доводятся до кондиции чаще всего только путём последующего брожения. Так, характерный вкус швейцарского твёрдого сыра достигается в результате последующего пропионовокислого брожения. При этом под действием бактерий рода Propionibacterium пируват в результате сложной последовательности реакций превращается в пропионат (2).
