Предельная норма этанола для здорового человека при ежедневном приёме составляет 60 г для мужчин и 50 г для женщин. Эта величина зависит от массы, состояния здоровья, а также от приёма лекарственных препаратов. Повышенное потребление этанола в течение года вызывает заболевание печени.

Из-за высокого уровня НАДН и ацетил-КоА, вызванных приёмом этанола, в печени тормозится цитратный цикл и кетогенез, нарушается биосинтез нейтральных жиров и холестерина, наблюдается повышенное отложение жира (жировая дистрофия). Отложение жира (от 5 до 50 % по сухой массе) чаще всего процесс обратимый. При гибели гепатоцитов из-за хронического алкоголизма наступает фиброз печени (избыточное развитие соединительной ткани). При циррозе печени заболевание переходит в необратимую форму, для которой характерно прогрессирующее отключение функций печени.
